Safranal is mainly derived from saffron and is a natural product molecule. Saffron is cultivated in small quantities in Beijing, Shanghai, Shandong, Zhejiang, Sichuan, Xinjiang, etc. in my country, and is cultivated in Spain, Iran, Italy, Germany, France, Greece, Austria, the former Soviet Union and Japan.
Safranal is the main component of volatile oil and the source of the unique aroma of saffron, which is obtained from crocin and HTCC during the drying process of saffron. Since this compound does not exist in fresh stigma, its concentration in saffron strongly depends on the drying and storage conditions.
Some volatile oil precursors produced by different degradation pathways during the drying and storage of saffron stigma are glycoside compounds belonging to trimethylcyclohexene derivatives, mainly including crocin.
Crocin is the main bitter component in saffron, which can be converted into crocin under acidic or alkaline conditions or under the action of enzymes, which is also the reason why the content of crocin in different varieties is different.

Safranal is a chemical component contained in saffron. It is an approved food flavoring that can be used to prepare rum, fig, tea, and woody and herbal flavors.
Pharmacological effects of Safranal.
Safranal is a potent anticonvulsant in animal models and has been shown to act as an agonist at GABAA receptors. Safranal also has high antioxidant and free radical scavenging activities, as well as cytotoxicity against cancer cells in vitro. One of its anticancer mechanisms involves disruption of the normal assembly dynamics of cellular microtubules. It has also been shown to have antidepressant properties in animals and preliminary human studies.
