Erythritol is a polyol (sugar alcohol) that occurs naturally in fruits such as pears, melons and grapes, and can also be found in other foods such as mushrooms, as well as wine, soy sauce and cheese. Erythritol is a white crystalline powder with a pure and refreshing sweetness that tastes similar to sucrose.
Erythritol is about 70% as sweet as sucrose; it has good fluidity because it is non-hygroscopic. Erythritol has a caloric value of 0 calories per gram and is distinguished from other polyols by its high digestibility.
Erythritol is rapidly absorbed by the small intestine and is quickly digested by the body within 24 hours, so when consuming foods containing erythritol, the laxative side effects that may occur when consuming excessive amounts of polyols are unlikely to occur.

Low-calorie sweetener; diluent for high-intensity sweeteners. Can be used in chocolate, baked goods, candy, table sugar, soft drinks, etc.with a maximum usage of 3%. Used in organic synthesis and biochemical research. Allele changes in the Tas1r3 gene affect the taste response of sucrose alcohol. It is a T1R3 receptor ligand.

Erythritol can be extracted from seaweed, moss and some grasses. It can be synthesized artificially by reacting butenediol with hydrogen peroxide. Butenediol is first made into 2-butyne-1,4-diol by acetylene and formaldehyde, and then its aqueous solution is mixed with Raney nickel and the inhibitor ammonia is added, and hydrogenation is carried out at about 0.5MPa.
