Beta-carotene is the most widely available and stable natural pigment in nature. Due to its large number of sources of agricultural products and unique physiological and nutritional effects, beta-carotene was compiled into the U.S. Pharmacopoeia as a food additive and nutritional supplement in 1985, and was recommended by the Joint Expert Committee on Food Additives of the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) as an "A Class Excellent Nutritional Colour" and has been approved for use in 52 countries and regions around the world. Antioxidants such as α-tocopherol, stearoyl ascorbate, and BHA are usually added. Used as a colouring agent in small quantities, e.g. 1.37mg/kg for margarine, combined with vitamin C in fruit juice to improve stability.
Physiological functions and actions of Beta-Carotene.
The antioxidant property of β-carotene is mainly manifested in its ability to scavenge free radicals. β-carotene molecules contain multiple double bonds, which are easily oxidised in the presence of light, heat, oxygen and free radical ions with high activity, thus protecting the organism from being destroyed.
