Capsicum oleoresin Powder Usage and Synthesis.

Chilli oleoresin, also known as chilli extract, chilli oil, chilli essential oil. It is a mixture containing many kinds of substances, mainly consisting of capsicum pigment-like substances and spicy substances.

Its representative substances are capsaicin, capsaicin yuccine, capsaicin, zeaxanthin, corydaline, capsaicin diacetate, capsaicin chondroitonate, etc.; the spicy substances include capsaicin, capsaicin alcohol, dihydrocapsaicin, and descending dihydrocapsaicin, etc..

Others are carobin, tartaric acid, malic acid and so on. By the Solanaceae in the pepper, especially the cow horn pepper and other mature (red) fruit by crushing and then extracted with organic solvents (ether, acetone or ethanol) and obtained. The product is dark red to orange-red, slightly sticky. There is a strong pungent flavour, and moxibustion hot feeling, and can reach the whole mouth to the throat.

In the food industry can be used as flavouring, colouring, aroma enhancer and fitness aids. It can also be used as a raw material for making other complexes or single preparations. Capsicum oleoresin is a mixture including capsicum essential oil resin and capsicum red oil resin, capsicum essential oil resin is where the spiciness lies in capsicum oleoresin and capsicum red oil resin is non-spicy and blood-red in colour.

Pure chilli red pigment can be obtained by precipitating lustrous needle-like crystals from petroleum ether, with a melting point of 181~182℃. Maximum absorption light wave is 483nm.

Soluble in acetone, chloroform; also soluble in methanol, ethanol, ether, benzene; slightly soluble in petroleum ether, carbon disulfide; insoluble in water and glycerol and soluble in most non-volatile oil. Resistant to heat, acid and alkali. Can be discoloured by Fe, Cu, Co, etc.; forms precipitate by Pb.

As a crude product, it often contains capsaicin about 50%, capsaicin about 8.3%, zeaxanthin about 14%, β-carotene about 13.9%, cryptocapsaicin about 5.5% and so on.

Residual solvent ≤ 0.003%, heavy metals (Pb) ≤ 0.002%. Partially soluble in ethanol, but soluble in most non-volatile oils (or edible oils).
