L-hydroxyproline is a natural component of animal structural proteins such as collagen and elastin. Several microorganisms producing proline trans-4- and cis-3-hydroxylases were identified and these enzymes were used in the industrial production of trans-4- and cis-3-hydroxy-L-proline.
L-hydroxyproline is an important amino acid that has a variety of applications in living organisms. In collagen, the amount of L-hydroxyproline is a criterion for determining its quality.
