Paraginose is commonly known as Isomaltulose, which is a disaccharide that combines glucose and fructose with α-1,6. Glucosyltransferase (Glucosyltransferase) by the action of sucrose glucose and fructose original α-1,2 binding part of the dissociation, into α-1,6 binding and get. It is different from sucrose only in the connection part of glucose and fructose within the molecule, so it is the isomer of sucrose. It is white crystal, no odour, molecular weight of 360.32, contains one mole of water of crystallization, melting point 124 ℃, specific optical rotation [α] [20] 0 for 97.2, not hygroscopic or very low, solubility and viscosity is lower than sucrose, acid resistance. Currently all use biotechnology's immobilised cell (enzyme) method to convert sucrose into Paraginose.
