Tannase is a glycoprotein with molecular weight and glycan chain content varying depending on the source, consisting of 2-8 monomers polymerized with a glycan base content ranging from 12% to 62%. Tannase is a glycoprotein that varies in molecular weight and sugar chain content from different sources. Tannases convert tannin compounds to butyric acid during starch saccharification, thereby reducing the astringency of the raw material.
