    Acid Blue 74 is a food coloring that is also used in dyes and pigments. Its chemical formula is C16H8N2Na2O8S2 and has a high relative molecular mass. The pigment has a dark blue powder with a copper-like luster and is sensitive to light and oxidizing agents. At 25 ℃, 1 gram of acid blue 74 can be dissolved in 100 ml of water, slightly soluble in ethanol, almost insoluble in other organic solvents. The pigment is easy to be nitrate, chlorate discoloration, its aqueous solution stored for a long time can also fade.
