Lactose Powder Usage and Synthesis.
Lactulose is made by converting lactose as raw material through alkali. The isomerization reaction is carried out by heating in sodium hydroxide solution, and borates are used to facilitate the isomerization reaction.
Under alkaline conditions, the glucose residues in the lactose molecule undergo isomerization reaction and are converted into fructose residues, which are then produced through ion exchange, decolorization, concentration and crystallization.
Due to the large consumption of alkali, lactulose is expensive and was previously used as a medicine. At present, the sugar has been produced by Morinaga Milk Industry in Japan and is mainly added to products such as cow's milk and milk powder. Lactulose that appears in heated dairy products is the product of isomerization of endogenous lactose.
