Product Overview:
Glucose oxidase is an enzyme found in moulds such as Penicilliumnotatum and honey. It catalyses the reaction D-glucose + O2D-gluconic acid (δ-lactone) + H2O2.EC1.1.3.4 The enzyme from Penicillium notatum has been noted for its apparent antimicrobial properties. Hence the name glucose oxidase (notatin), and it is now clear that the antimicrobial properties are due to the sterilising properties of the H2O2 produced by the reaction. Glucose Oxidase Usage and Function.
Glucose oxidase, as a food additive, has the functions of converting glucose and removing residual oxygen - maintaining the colour, aroma and taste of food, stabilizing product quality and prolonging preservation time.
(1) Glucose oxidase system can oxidise the sulfhydryl group (-SH) in the gluten molecule to disulfide bond (-S-S-), which can enhance the strength of gluten, improve the ductility of the dough, increase the volume of bread, and replace potassium bromate (Kb), which is carcinogenic to human body. It can replace potassium bromate (KbrO4), which has carcinogenic characteristics for human body. In the production of noodles, glucose oxidase helps to form a better protein network structure between gluten proteins and increase the bite of noodles.
