Pepsin Powder Usage and Synthesis.
Gastric fluid pepsin assay is used to differentiate between neurogenic and gastric hypoacidity, the former sometimes having a normal pepsin level when there is too little or no gastric acid, and the latter having a deficiency of both hydrochloric acid and pepsin.
It is generally accepted that gastric hypoacidity is due to severe organic changes in the gastric mucosa, especially in pernicious anaemia, in the absence of acidosis, and in the absence of pepsin secretion, which is an important diagnostic observation. Pepsin secretion is often reduced in chronic gastritis, chronic gastric dilatation, and chronic duodecolitis.
Uses of Pepsin.
It is mainly used in the manufacture of fishmeal and the hydrolysis of other proteins (e.g. soya protein), in the manufacture of cheese for its curdling properties (in combination with rennet), and in the prevention of cloudiness in the refrigeration of beer. Pepsin is a digestive protease, secreted by the gastricchiefcells in the stomach, which breaks down food proteins into small peptide fragments. The precursor of pepsin is known as pepsinogen.
