Invertase is also called sucrase. Enzymes that catalyze sucrose hydrolysis. Sucrose is catalyzed by sucrase. It is hydrolyzed to two reducing sugars, D-glucose and D-fructose. Sucrase plays an important role in plant transport, storage and carbohydrate metabolism. It also plays an important role in osmoregulation, stress resistance growth and reproduction, and signal transduction.
Uses of invertase powder.
Enzyme preparation. It is mainly used to decompose sucrose into invert sugar, so as to obtain a high concentration of sugar liquid with higher solubility than sucrose and not easy to precipitate sugar crystallization, which is used in ice cream, liquid chocolate, preserves, various candies, jams, etc. It is also used to produce artificial honey and to remove sucrose from food.

Excellent strains of brewer's yeast (Saccharaomycescerevisiae) or S. cullsbetjgensis (S.crlsbetjgensis) were aerated in the medium containing 2% sucrose. The collected yeast was added with trichloromethane, ethyl acetate and toluene for autolysis, so that the saccharase was dissolved in vitro. Then alumina, kaolin and other adsorption refining, with 50% ethanol to precipitate the enzyme. The pure enzyme is unstable, so it is diluted with glycerin.
