β-amylase alias saccharification amylase, systematically named α-1,4-glucan glucose hydrolase, is the main saccharification agent for beer brewing and caramel manufacturing. β-amylase is a beige non-clumping powder or brownish-yellow liquid. It is soluble in water under normal use concentration. The optimum pH is 4~5, the optimum temperature is 50~60℃, the enzyme activity is the highest in the range of 55~60℃, and the activity decreases quickly if the temperature is higher, and the activity disappears above 80℃.

β-Amylase Powder Usage and Synthesis.
β-amylase in the food industry as a saccharification agent for maltose syrup, beer, bread and other manufacturing. An important use of β-amylase in the pharmaceutical industry is the manufacture of maltose, the absorption of maltose does not depend on insulin, so even diabetic patients can also be consumed in moderation. In medicine, β-amylase can be used as digestive aid together with α-amylase.
When β-amylase acts on starch, it starts from the non-reducing end of the sugar chain and cuts off the α-l,4-glycosidic bond with a unit of maltose and converts the configuration of maltose from α-type to β-type, i.e., the obtained one is β-maltose.
However, unlike other glycolytic enzymes, β-amylase cannot bypass the α-1,6-glycosidic bond to continue its action, so when it acts on branched-chain starch, generally only 50% to 60% can be converted to β-maltose, while the rest of the portion is β-limit dextrin.
