Sodium Propionate Powder Usage and Synthesis.
In the food industry, it is used as bulking agent, dough regulator, buffering agent, organization improvement agent, curing agent, nutritional supplement, chelating agent and so on.
Such as for bakery products, pastry puffing agent; bread, cookies, leavening agent, buffer, pectin curing agent (gel effect); yeast food meat products, tissue improvement agent. Sodium propionate is used as food preservative and mold inhibitor, can be used alone or with propionic acid and sorbic acid. Because it is alkaline, it is more suitable for pastry making than calcium propionate.
Propionate is important for the preservation of baked foods such as bread, pastries and cookies, due to the fact that propionic acid has a small ionization constant and thus remains effective under alkaline conditions. is used in brewing to increase saccharification power and improve beer fermentation; as a viscous substance printing agent or feed additive.
Uses of Sodium Propionate.
Sodium propionate liquid wet acid type preservative, its bacteriostatic effect is affected by the environmental PH. The minimum inhibitory concentration is 0.01% at PH5.0 and 0.5% at PH6.5. It has strong inhibitory effect on various molds, aerobic bacillus or gram-negative bacillus in acidic medium.
It is effective in preventing the production of aflatoxin, but almost ineffective against yeast. In addition, it is also used as a food preservative.

It is produced by neutralizing propionic acid with sodium hydroxide or sodium carbonate. Sodium carbonate powder is dissolved in neutralization pot, then add propionic acid to neutralize to PH=7-8, neutralization temperature is 70-100℃, neutralization time is 2-3h. Neutralized liquid is filtered to remove insoluble material, and the clear night is concentrated, cooled, crystallized, separated and dried to get the finished product.
