β-Caryophyllene is a bicyclic sesquiterpene that occurs naturally in essential oils of basil, copaiba, black caraway, oregano, lavender, rosemary, cinnamon, ylang-ylang, and clove.
It is usually found in admixture with isocaryophyllene (the cis double bond isomer) and α-humulene (obsolete name: α-caryophyllene, an open-ring isomer).

Caryophyllene Powder Usage and Synthesis.
1. Used to prepare edible flavors such as cloves, pepper, nutmeg, citrus, and herbs. The recommended dosage is about 2 to 200 mg/kg in the final flavored food.
2. It can also be used to synthesize other spices, such as acetyl caryophyllene and other more valuable spices.
Uses of Caryophyllene.
GB 2760-96 stipulates that it is an edible flavoring agent allowed for use. It is mainly used to prepare essential oil imitation products and fixatives.
Used as a food additive in spice mixtures and citrus flavors, especially chewing gum. The recommended dosage in the final flavored food is about 2~200mg/kg

Pharmacological Action of Caryophyllene.
1. Local anesthetic effect
The method to verify the anesthetic effect of β-caryophyllene is to use the method invented by Donatelli and Buffoni. The control drugs are oxidized caryophyllene and procaine. Through research, it is speculated that the anesthetic effect of caryophyllene is related to its structure. In order to illustrate the anesthetic effect of caryophyllene, the commonly used local anesthetic procaine is used as a control. By comparing it with it, the anesthetic effect of β-caryophyllene can be proved.
2. Irritation
β-caryophyllene is highly irritating to the skin after oxidation, and the skin is prone to allergies. The irritation of β-caryophyllene is weakened after being exposed to air for 10 weeks. β-caryophyllene oxide is a moderate allergen. In addition, studies have shown that β-caryophyllene is a sensitizer.
The reason why β-caryophyllene is prone to allergies is not because of itself, but because the double bonds of β-caryophyllene are easily oxidized. The reason why the double bond of β-caryophyllene is easily oxidized is that when β-caryophyllene is exposed to the air, it forms peroxides, which are very unstable. After being converted into primary peroxide products, it quickly converts into a more stable oxidation product, a moderately allergenic oxide.
