Karaya gum can be used in a wide variety of products such as dietary products, desserts, pharmaceuticals, doughnuts, sauces, ready-to-eat meals, ice cream and biscuits. Without any chemical modification, karaya gum offers numerous functional properties: texture and filler, edible fibre, adhesion, viscosity control, water retention and suspension. Karaya gum has a pronounced effect on texture, even at low concentrations.

Thickener, stabiliser, emulsifier, humectant. Avoids precipitation of ice crystals in frozen products and fat and gravy in sausages.
