1) Fresh sea cucumber is screened and cleaned by gut shaving;
2) low-temperature ultra-micro crushing and homogenising treatment of sea cucumber: low-temperature ultra-micro crushing and homogenising treatment at 4°C for 80min, after crushing, the particle size of the sea cucumber particles obtained is 15μm, and sea cucumber homogenising liquid is obtained; the particle size of the sea cucumber particles can be adjusted according to the change of the time of the homogenising treatment, with a short period of time for large particles, and vice versa for small particles, and the particle size of the particles can not be more than 25μm at maximum, and the particle size can be 10μm at minimum.
3) Compound low-temperature enzyme digestion: mix low-temperature protease and amylase according to the weight ratio of 2:1, add to the sea cucumber homogenate obtained in step 2), the weight ratio of the total weight of low-temperature protease and amylase to the sea cucumber homogenate is 0.8:100, and the enzymatic treatment is carried out at 40 ℃ for 18h to obtain the enzyme digestion solution.
