β-carotene (β-carotene) belongs to the carotenoids, it is the prevalent and most stable natural pigment in nature, it is a kind of fat-soluble compounds with orange colour, glossy rhombohedral hexahedron or crystalline powder, it is mainly derived from the green plants and the natural food such as the yellow,orange fruits, etc. Dilute solution of β-carotene is orange-yellow to yellow, and it has an orange colour when its concentration is increased, and may be slightly red depending on the polarity of the solvent. Beta-Carotene Powder Usage and Synthesis.
Beta-carotene is the most widely available and stable natural pigment in nature. Due to its large number of sources of agricultural products and unique physiological and nutritional effects, beta-carotene was compiled into the U.S. Pharmacopoeia as a food additive and nutritional supplement in 1985, and was recommended by the Joint Expert Committee on Food Additives of the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) as an "A Class Excellent Nutritional Colour" and has been approved for use in 52 countries and regions around the world. Uses and functions of Beta-Carotene.
Nutritional supplements and colours. According to the "Hygienic Standard for the Use of Food Nutritional Enrichment Agents (1993)" issued by the Ministry of Health of China, it can be used in cream and puffed food, with a maximum use level of 0.2g/kg.
The physiological effect of 0.6μg of this product is equivalent to 1 international unit (I-U-) of vitamin A. It is widely used as yellow colouring instead of oil colouring.
Now it is widely used as yellow pigment instead of oil-soluble tar pigment, such as for the original carotene-containing cream, cheese, mayonnaise, etc., and widely used in other edible fats and oils,margarine, shortening, pastry, bread and so on.
When used in oily foods, it is often dissolved in edible oils such as cottonseed oil or suspension preparations (content 30%).
Even when used after dilution, it prevents the oxidation of β-carotene. Antioxidants such as α-tocopherol,stearoyl ascorbate, and BHA are usually added. Used as a colouring additive in small amounts, such as for margarine is 1.37mg/kg.

Function of Beta-Carotene.
The antioxidant property of β-carotene is mainly manifested in its ability to scavenge free radicals. β-carotene molecules contain multiple double bonds, which are easily oxidised in the presence of light, heat,oxygen and free radical ions with high activity, thus protecting the organism from being destroyed.
The presence of β-carotene reduces lipid peroxidation and free radical reactions in organisms, which leads to a decline in cellular function, aging of the organism and the onset of disease.
Therefore, the activity of carotenoids in scavenging free radicals as well as quenching of single-linear oxygen species is of general interest.
Product Method of Bulk Beta-Carotene Powder.
1.Extraction of natural β-carotene from natural substances is usually produced by three methods: plant extraction, salt algae extraction and fermentation. China mainly adopts the salt algae extraction method and fermentation method, and the plant extraction method has been phased out in China.
2. Synthesis method The intermediates 3,8-dimethyl-3,5,7-tridecene-1,9-diynylphenyl lithium and 4-(2,6,6-trimethyl-1-cyclohexen-1-yl)-2-methyl-2-buten-1-aldehyde of the synthesis method are contained in U.S.
Patent 2917539. The industrial products are generally made into edible grease solutions or suspensions,emulsions, and dispersible powders of β-carotene in water. powders that can be dispersed in water.Antioxidants, emulsifiers, dispersants and different ratios of trans/cis isomers may be added to improve stability.
