Uses of Tartrazine.
As a food coloring agent, our country stipulates that it can be used in fruit juice (flavor) drinks, carbonated beverages, prepared wine, green plums, shrimp (flavor) slices, dipped vegetables, red and green silk candies, colorful decorations on pastries and canned watermelon sauce, with the maximum use amount of 0.1g/kg; the maximum use amount in vegetable protein drinks, lactic acid bacteria drinks, with the maximum use amount of 0.05g/kg; the maximum use amount in ice cream, with the maximum use amount of 0.02g/kg.
Chemical Properties of Tartrazine.
Orange-yellow uniform powder, 0.1% aqueous solution is yellow, odorless. Soluble in water, glycerol and propylene glycol, slightly soluble in ethanol, insoluble in oil and grease. solubility at 21℃: 11.8% (water), 3.0% (50% ethanol).
Heat resistance, acid resistance, light resistance and salt resistance are good, stable to citric acid and tartaric acid, but poor oxidation resistance.
It turns red when exposed to alkali and fades when reduced. Maximum absorption wavelength 428nm±2nm, oral LD50 in rats >2000mg/kg, ADI0-7.5mg/kg (FAO/WHO, 1994). Lemon yellow starch is yellow fine powder, odorless.
Slowly soluble in aqueous solution containing acid or alkali, insoluble in water and organic solvents. Heat resistance and light resistance are stronger than lemon yellow.
Product Method of Bulk Tartrazine Powder.
Produced from p-aminobenzenesulfonic acid by diazotization and coupling with 1-(4'-sulfophenyl)-3-hydroxy-5-pyrazolone; it can also be produced by condensing sodium bis-hydroxytartaric acid with phenylhydrazine p-sulfonic acid, alkalizing and then salting out the resulting pigment with table salt, and then refining it.
