Pullulanase acts synergistically with other amylases or alone to improve food quality, reduce grain consumption, save cost and reduce pollution. The application of Pullulanase in the food industry will be more and more extensive and in-depth research.
The synergistic action of Pullulanase and glucoamylase in the saccharification stage can improve the hydrolysis rate of starch, reduce the amount of glucoamylase, shorten the reaction time, and improve the yield and purity of glucose.
Glucoamylase is an exonuclease that hydrolyzes the a-1,4 glycosidic bond of the starch molecule and also hydrolyzes the a-1,6 glycosidic bond and the a-1,3 glycosidic bond, but the hydrolysis of the latter two bonds is slower.
Uses of Pullulanase.
Pullulanase is a debranching enzyme capable of specifically cutting the a-1,6-glycosidic bond in the branching points of branched-chain starch and is widely used in food processing. The enzyme is capable of breaking down branched starch, maximizing the use of starch raw materials, improving food quality, reducing food consumption, saving costs and reducing pollution. In addition, Pullulanase can further improve food quality by acting synergistically with other amylases or acting alone.

Brown-yellow fine powder or almost white liquid. Soluble in water, insoluble in ethanol, chloroform and ether. It can hydrolyze the 1,6-α-glucosidic bond in the bud short peduncle spore sugar (Pullulan), while an amylase and α-amylase can hydrolyze the branched-chain starch and glycogen in dextrin into maltotriose and maltose.
