Carrageenan is also known as antler gum and carrageenan gum. Carrageenan is a hydrophilic colloid extracted from certain red algae seaweeds, and its chemical structure is composed of calcium, potassium, sodium and ammonium salts of polysaccharide sulfate esters of galactose and dehydrated galactose. Uses of Carrageenan.

From plants such as hornwort (C~ondr. scrispus; C0cellatus; Eucheumacottonii; E. spinosum; Giga~ a tina mouth catherularisspp.) belonging to the red algae (Rhondophyceae), extracted by heating with dilute alkali or by hot water, precipitated with alcohols, and by roller drying or freezing. The alcohols used are limited to methanol, ethanol and isopropanol.
When recovering carrageenan by drum drying, mono- or diglycerides, or polysorbate 80 of less than 5% must be added as a drum stripper. Commodities can be diluted with sugar to meet the standard, mixed with salts (usually KCl) to obtain special gel or thickening properties.
