Tamarind gum is a neutral polysaccharide extracted from the seed endosperm (also known as sour tamarind or sour plum seeds) of the genus Tamarind in the Leguminosae family. It is easily dispersed in cold water and forms a viscous liquid when heated. Tamarind gum has good heat resistance, salt resistance, acid resistance, freezing and thawing resistance, and has the functions of stabilization, emulsification, thickening, coagulation, water retention, and film formation.
