Tamarind gum is a neutral polysaccharide extracted from the seed endosperm (also known as sour tamarind or sour plum seeds) of the genus Tamarind in the Leguminosae family. It is easily dispersed in cold water and forms a viscous liquid when heated. Thickener, stabilizer, gelling agent. It can be used in ice cream, sorbet, sauces, canned cooking, instant curry seasoning, fruit drinks, whipped cream, jam, orange peel jelly, sponge cake, general jelly, yokan, etc.
As a thickener. my country stipulates that it can be used in jelly, candy and ice cream, with a maximum usage of 2.0g/kg and a general usage of 0.2~1.0g/kg.
