Saccharin sodium, also known as saccharin, scientific name phthaloylbenzimide sodium salt. White prismatic crystal. Molecular weight 205.17, melting point 226~231℃. Odourless or slightly fragrant, very sweet and bitter taste, slowly weathering in the air, losing about half of the water of crystallisation and becoming white powder. Mainly used as edible sweetener. It is not decomposed in human body and excreted with urine, with no nutritional value. Produced from phthalic anhydride or toluene as raw material.

Sodium saccharin is the synthetic sweetener commonly used in the food industry and has the longest history of use, but it is also the most controversial synthetic sweetener. Sodium saccharin is 300-500 times sweeter than sucrose and is not broken down in living organisms and is excreted by the kidneys.
However, it is not highly toxic, and the controversy is mainly over its carcinogenicity. Recent studies have shown that the carcinogenicity of saccharin may not be caused by saccharin, but is related to sodium ions and high proteinuria in rats. The anion of saccharin may act as a carrier of sodium ions and lead to changes in the physiological properties of urine.
