    Amylase Usage and Function.

    Amylase is a digestive enzyme secreted primarily by the pancreas and salivary glands, but is rarely found in other tissues. Amylase was first described in the 1800s and is considered one of the first enzymes in history to be scientifically studied. It was initially known as the revolting digestive fluid, but was later renamed amylase in the early 1900s.

    The main function of amylase is to hydrolyse the glycosidic bonds in the starch molecule, converting complex carbohydrates into simple sugars. Amylases are divided into three main groups: α-, β-, and γ-amylases act on different parts of the carbohydrate molecule.α-Amylases can be found in humans, animals, plants, and microorganisms.β-Amylases are found in microorganisms and plants.γ-Amylases are found in plants and animals.

    Uses of Amylase.

    Enzyme preparation. It is one of the most widely used and consumed enzyme preparations. It is mainly used for dough improvement in bread production (reducing dough viscosity, accelerating fermentation process, increasing sugar content, and slowing down bread aging); pre-treatment of cereal raw materials (starch hydrolysis) in baby food; for saccharification and decomposition of undecomposed starch in beer manufacturing; for the liquefaction and saccharification of starch in sake production; for the saccharification and decomposition of undecomposed starch in the alcohol industry; for the decomposition of starch in fruit juice processing and for improving filtration speed in fruit juice processing; and vegetable processing, syrup manufacturing, syrup production, caramel production, powdered dextrin, glucose and other processing and manufacturing.
