Cellulase is a catalytic degradation of cellulose hydrolysis and the generation of glucose and low polymerization of fibers of a group of enzymes, including dextran endonuclease, dextran exonuclease and cellobiose enzyme 3 main components, it is not a single enzyme, but a synergistic multi-component enzyme system. Cellulase is an off-white powder or liquid. 1906 Seilliere found cellulase in the digestive fluid of snails. Cellulase hydrolyzes the β-1,4-glucosidic bonds in fibers to produce soluble polymers and D-glucose. Depending on the source of the enzyme, its relative molecular mass is as low as 5,000 and as high as 400,000. the optimum pH is 4.0 to 5.0. the optimum temperature is 40 to 60 ℃. Some metal ions Mg2+, Cl2+ and neutral salts can activate the enzyme, while some other metal ions Ag2+, Cu2+, Mn2+, Hg2+ and dyes can inactivate the enzyme.

Cellulase is now widely used in various fields such as textile, daily chemicals, paper making, food fermentation, industrial washing, tobacco, oil extraction, wastewater treatment and feed, etc.and its application prospect is very broad. Natural cellulase exists in microorganisms, certain insects and plants.
When plant seeds germinate, cellulase hydrolyzes seed coat cellulose, facilitating seedling emergence. Symbiotic bacteria and protozoa in the digestive tract of herbivorous ruminants can secrete cellulase, which hydrolyzes cellulose into absorbable sugars.
The use of microbial secretion of cellulase for agricultural by-product processing, can produce high-quality feed and glucose. Agricultural application of green wood mold (a fungus rich in cellulase) for feed fermentation, can improve the nutritional value of cellulose feed.
Cellulase products are one of the main reagents for separating plant protoplasts, and in plant cell fusion experiments, cellulase or snail enzyme is commonly used to break down and remove the cell wall in order to separate and obtain the required protoplasts.
Most industrial cellulases are glucoside endonucleases containing a catalytic region and a cellulose linkage region. Without the cellulose linkage region the enzyme has low activity for cellulose. A controlled study of cellulases and proteases has been carried out and found that the activity of cellulases is more related to the strength of adsorption.
Amino acid residue Tyr at position 169 in the catalytic region of the cellobiose hydrolase of Trichodermareesei assists in the conversion of the glucose ring to a more reactive conformation.
Uses of cellulase powder.
Cellulase is mainly used for softening and peeling of grains, beans and other plant foods; controlling (lowering) the viscosity of coffee extracts, with a maximum permissible dosage of 100mg/kg; pre-treatment of brewing raw materials; manufacture of starch, agar and seaweed foods; elimination of turbidity in fruit juices caused by cellulose species; and instant solubilization of green tea, black tea and so on. As a feed additive, it helps animals to digest and absorb the feed.
Used in biochemical research, plant cell hybridization research, used to catalyze the hydrolysis of cellulose molecules for oligocellulose and enzymes, medicine is commonly used as a digestive enzyme.

General optimum temperature for the role of 50 ~ 60 ℃, the optimum Ph value of 4.5 ~ 5.5. by Aspergillus niger and Aspergillus platensis extracted by the product ADI does not make special provisions for the production of ADI by Penicillium unspecified (FAO/WHO, 1994).
Product Method of Bulk cellulase powder.
Generally, Aspergillus niger (Aspergillusniger) or Trichodermareesei (T. longibrachiatum) is used for cultivation, and then the fermentation broth is precipitated and refined by salting out. In addition to cellulase, the resulting product also contains hemicellulase, pectinase, protease, lipase, xylanase, cellulase and starch glucosidase.
