Alitame powder Classification.
Alitame is a dipeptide synthetic sweetener synthesised from aspartic acid and alanine, its sweetness is more than 2,000 times that of sucrose and 10 times higher than that of aspartame, it has the advantages of good taste, high sweetness and low calorie, it is one of the substitutes for sucrose, it is stable in nature and is widely used in the food industry, it can be added to dairy products, frozen beverages, preserved fruit, beverages, gum-based confectionery.
Uses of Alitame.
It is a new type and high sweetness sweetener. Our country stipulates that it can be used in gummies, Chenpi, plums, plums and dried prunes, with a maximum dosage of 0.3g/kg; in beverages, ice-cream and snow-cream, with a maximum dosage of 0.1g/kg; and it can also be used as a table-top sweetener, with a maximum dosage of 0.015g/packet and slice.
Preparation of Alitame.
(1) Preparation of alitame solution: The raw material for the preparation of alitame standard substance was industrial grade alitame, the raw material of alitame was dissolved in water and dissolved by ultrasonication, and then filtered by 0.22 μm filtration membrane to obtain alitame solution;
(2) Liquid chromatography preparation: the alitame solution was injected into the preparative chromatography to separate the pure fractions, and the chromatographic conditions were PREP-ODS(H)-KIT (250 mm×20 mm, 5 μm); mobile phase: 40% (v/v) methanol aqueous solution; flow rate: 10 mL/min; column temperature: 30 ℃; running time: 15 min; detection wavelength: 210 nm. The injection volume was 0.2 mL, and the fractions were collected within 7.5-9 min;
(3) Fraction collection: the fraction was received in a brown bottle with the outer wall wrapped with tin foil filled with nitrogen, and then a small amount of hydrochloric acid was added to neutralise it to pH7;
(4) drying: the fraction is placed in a rotary evaporator using decompression distillation method at 55 ℃ -75 ℃, and then placed in a lyophilizer -50 ℃ in the freeze-drying for 24 hours, freeze-dried aleutic acid solid grinding and crushing, and then again freeze-dried for 24 hours has been as far as possible to remove the free water, get aleutic acid standard material; after determination, the purity of the standard material is 99.4%.
(5) Preservation: in a relatively independent and clean glove box on the preparation of pure allium sativum solid using 2mL brown sample bottles for dispensing, with PTFE lined black bottle cap sealing, and plastic bags independent vacuum plastic sealing.
