Malic acid, also known as 2-hydroxysuccinic acid, is a dicarboxylic acid with a chemical formula of C₄H₆O₅. The molecule contains an asymmetric carbon atom, so there are two optical isomers and a racemic body. It is one of the intermediates of the tricarboxylic acid cycle, generated by the hydration of fumaric acid and further oxidized to oxaloacetic acid. Product Methods of DL-malic Acid.
DL-malic acid can be obtained by adding water to fumaric acid or maleic acid under high temperature and high pressure. Dissolve fumaric acid in distilled water, preheat to 50℃ and add to a high-pressure reactor. Heat to 180-199℃, pressure about 1MPa, react for 8h, cool to below 100℃, and press out the reactant.
Vacuum concentrate at 60℃ to precipitate crystals. Then cool, dehydrate and dry to obtain the finished product. The yield is 88%. Another major production method of malic acid is fermentation, which uses mutant yeast to ferment sugars.
