Potassium citrate (Potassiumcitrate), also known as potassium citrate, tripotassium citrate. A citrate, molecular formula C6H5K3O7, molecular weight 306.39500, it is a white or slightly yellow crystalline particles or crystalline powder, odorless, salty taste, cool, deliquescent, soluble in water, almost insoluble in ethanol. Relative density 1.98. melts and decomposes when heated to 230℃.

It is used as buffering agent, chelating agent, stabilizer, antioxidant, emulsifier, flavoring agent, etc. in the food industry. Potassium citrate is also used in milk and dairy products, jellies, jams, meats, canned hydrogel snacks, emulsification of cheese, preservation of citrus. It is used in the pharmaceutical industry for hypokalemia and potassium deficiency and for alkalizing urine.
Uses of Potassium Citrate.

Usage of Potassium Citrate.
1. It is used to adjust the acidity of jam and jelly to keep its pH at 2.8~3.5. The specific dosage varies according to different foodstuffs and is 0.5~5g/kg.
2. As stabilizer, used in light condensed milk, sweet condensed milk, thin cream, 2g/kg (used alone) or 3g/kg (combined with other stabilizers, in anhydrous matter); used in milk powder, dehydrated cream, 5g/kg (used alone or combined with other stabilizers, in anhydrous matter); used in processed cheese, 40g/kg (used alone or combined with other stabilizers, in anhydrous matter).
Dosage: It can be used in appropriate amount for all kinds of food according to production needs, 0.5-5g/kg for jam and jelly, 2-3g/kg for light condensed milk, sweet condensed milk and thin cream, 5g/kg for milk powder and dehydrated cream, 40g/kg for cheese.
